Garlic Varieties


Music
One of our favorite hardneck varieties, Music is a large-bulbed Porcelain cultivar. Porcelain cultivars have the highest amount of allicin (the compound in garlic with antioxidant and anti-inflammatory properties).
Taste: Medium hot, rich taste, sweet nutty flavor when cooked.
Storage: 9 months


Chesnok Red
A Purple-stripe variety, this is one of the best tasting garlics, displaying beautiful purple wrappers.
Taste: Medium heat with a sweet aftertaste
Storage: 6-7 months


Inchelium Red
A softneck variety that was discovered on the Colville Indian Reservation, this easy-to-peel bulb is also a national taste test winner.
Taste: Mild, yet rich flavor is especially good when baked.
Storage: 6-9 months

Montana Giant
A porcelain variety with 4-6 large and easy to peel cloves. Grows well in cold climates
Taste: Full flavor garlic with medium heat that mellows quickly
Storage: 9 months


Scapes
Scapes are the tender flower stalks of hardneck garlic plants that form a curl just prior to being cut. Many chefs consider them a rare delicacy, as they are only available in the late Spring and early Summer.
Taste: Mild and sweet, similar taste as chives or scallions with a hint of garlic.
Storage: 2 weeks in the fridge
